Our Menus
Our menu brings classic dishes with global flavours to the table, connecting you to our community and sharing their stories. Curated by Applejack’s Director of Culinary Patrick Friesen, the focus is on locally grown produce and seasonal ingredients that honour both tradition and innovation. From Bankstown to Bondi, the menu showcases NSW’s finest local producers and is designed to create memorable shared experiences.
The drinks offering speaks the same language; generous and forward-thinking. The beverage selection showcases native ingredients, regenerative growers, and a brilliant community of local brewers and distillers – perfect for enjoying while taking in the harbour views.
Opera Bar is open for walk-ins only – no bookings required.

Mardi Gras With Applejack
This year, we’ve partnered with Archie Rose, the official gin partner of Mardi Gras 2026, to shake up some special cocktails. $1 from every cocktail will be donated to Qtopia Sydney, the world’s largest centre for queer history and culture.
